Retail Kiosks & Bars - Retail Manager
This role sits within our Stadia division, catering for fans and visitors at prestigious stadiums across the UK. With matchdays, concerts, conferences, and banquets to be catered for, our specialist teams are experts in adapting to our client's needs with locally sourced seasonal menu's. What you'll be doing...
The incumbent is responsible for ensuring operational excellence across Hibernian FC’s matchday and non-matchday business, encompassing hospitality, retail, and conferencing, reporting directly to General Manager. They will oversee the management of, retail and bar operations, to deliver site level operating profit, to effectively grow and retain the contract. They will control and ownership of the Stadium retail outlets & bars, including customer service and cellar areas, within the overall policies and controls established by the company and General Manager, ensuring that the brand values and standards are delivered, and budgeted profitability is achieved.
They will lead all day-to-day operational planning and delivery, offering best practice and guidance to the onsite teams, in line with business objectives and company standards to achieve and maximize set targets. Establish and maintain a committed and engaged team.
Key Tasks & Responsibilities:
As retail/bars Manager for Elior you will:
- Be responsible for high volume transactions based around events such as matchdays.
- Be responsible for the delivery of quality food and beverage products in line to the company standards.
- Possess a great customer service focus and be committed to delivering excellence with a fast paced dynamic team
- Manage and be accountable for all Managers in areas of responsibility
- Have good attention to detail, ensuring areas look attractive and high levels of cleanliness are maintained both back and front of house
- Ensure accurate records are kept and the necessary documentation completed and filed in accordance with Company procedure
- Have a good understanding of Company regulations relating to Health and Safety, Fire, Food Hygiene and Trading Standards, and ensure these are adhered to
- Demonstrate strong leadership and communication skills and have the ability to deliver all necessary briefings to your team
- Report and liaise regularly with general manager regarding departmental performance and ensure they are informed of any relevant information or issues. Highlight general manager if the cellar has excess stock or any potential risk of short expiry dated product
- Liaise with Accounts department to ensure invoices, bar bills, bar tabs and etc are forwarded promptly and are correct. All the liqueur purchases are made in line with the company policies and relevant information passed to Accounts team and general manager.
- Oversee the services of bar within function rooms and maintain overall responsibilities for bar service within stadium Hospitality bars.
- Ensure cash procedures are adhered to and strictly monitored, including preparation and calculation of bar bills and cashing up of tills.

- To work close with the core suppliers.
- To be responsible for monthly bar stock takes.
- To plan and prepare match day build up schedule.
